Florent Colombo, a renowned Dijon chef, embodies the spirit of Burgundy's culinary heritage in this new landmark of Dijon gastronomy. Passionate about the flavours of his home region, he cut his teeth in a number of Michelin-starred establishments in Burgundy and made a name for himself with his flagship dish, oeufs en meurette, with which he aspired to win the world title. Committed to offering an authentic, tasty and warm culinary experience, Florent Colombo makes it a point of honour to bring out the best in local produce with dishes that are typically Burgundian.
